Jenna’s Chocolate Pie

Jenna’s Chocolate Cream Pie!   2 ½ cups whole milk ½ cup sugar ¼ cup corn starch 3 egg yolks ¼ tsp salt 8 oz semisweet chocolate chips 4 Tbs butter, cubed 9 inch pie crust 1 cup heavy cream ¼ cup shaved chocolate     In a saucepan heat milk, sugar, cornstarch, yolks, and salt. Whisk and cook for 8 minutes until its thick and creamy. Then add chocolate and butter. Pour mixture into pie crust and chill until its firm, about 5 hours. When you’re ready to serve it, whip the heavy cream and top the pie with the whipped cream and chocolate shavings.   Voilà, the best chocolate cream pie you’ll ever taste. OH MUH GAWD!

Look, look, LOOK! This lovely piece of sweet goodness is called a Banoffee Pie! MUST….MAKE…..PIE! This thing almost makes me weep with pure want. It’s a mixture of Dulce de Leche and Banana Cream. Good GOD! I know what I am making tomorrow, and you know what? I think you should make it too, so we can all put on 20 lbs. together, as a team, we will be fat, happy and full! Here is the recipe for you: Crust * 1 cup(s) graham cracker cookie crumbles * 1/2 cup(s) pecans, toasted, finely chopped * 4 tablespoon(s) unsalted butter, melted * 2 tablespoon(s) packed brown sugar Filling * 2 can(s) (13.4 ounces each) dulce de leche (caramelized sweetened condensed milk) * 4 large bananas * 1 cup(s) heavy cream * 1 tablespoon(s) confectioners’ sugar * 1/4 teaspoon(s) vanilla extract 1. Preheat oven to 350 degrees F. In bowl, mix crumbs, pecans, butter, and brown sugar. With back of spoon, press onto bottom and 1 inch up sides of 9 1/2-inch springform pan. Bake 10 minutes. Cool on wire rack. 2. Filling: Spoon dulce de leche into cooled crust and spread evenly. Peel and slice 3 bananas. Arrange over filling. In bowl, beat cream, sugar, and vanilla just until stiff; spread over bananas. Refrigerate 2 hours. 3. To serve, peel and slice remaining banana. Arrange over cream. Stacie 1-888-430-2010

Baking Time

Fall and Winter are my favorite times of the years, summer can suck it! lol Anyway, one of the reasons that it is, that it seems like this is when Mom’s, Grandma’s, Sister’s, yadda yadda bake. There is nothing better, then being outside running around, having some fun in the cool crisp air, then coming into the house and being met by the awesome aroma of fresh cookies or pie or bread or cake or whatever. It’s the most comforting feeling in the world. Now usually when I bake my stuff looks like this: or like this: (if you step away from your screen and look at these cookies, don’t the little house ones look like someone’s pants that are hiked WAY up, I call them high crotch cookies) But this year is going to be different.
